Halloumi, Fava Bean & Couscous Salad with Seaweed Seasoning

INGREDIENTS

A fresh and flavourful salad, made in collaboration with Yorkshire Dama Cheeses, SeaGrown, and The Honest Bean Co. as part of our EAT Yorkshire campaign. Perfect served with some chicken or even just some nice crusty bread, this is a delicious Spring dinner that is super simple to make.

Serves 4

INGREDIENTS

220g Yorkshire Dama Original Squeaky Cheese

3 tbsp Yorkshire Rapeseed Oil with Lemon

2 tsp SeaGrown Herby Lemon & Garlic Seaweed Seasoning

½ cup couscous (approx. 90g)

175ml boiling water

40g Honest Bean Co. Seaweed & Miso Fava Beans

70g baby leaf spinach

1 small red onion, peeled & finely sliced

½ carrot, peeled & julienned

¼ cucumber, julienned

Handful of chopped fresh coriander

Extra Lemon oil and Seaweed Seasoning to dress salad

Add 3 tbs of Yorkshire Rapeseed Oil with Lemon and 2 tsp of SeaGrown Herby Lemon & Garlic Seaweed Seasoning to a shallow bowl and mix them together to create a marinade. Slice the Yorkshire Dama Squeaky Cheese lengthways into 8-10 strips and roll them in the oil and seasoning mixture till they are lightly covered. Set aside.

Add the couscous to a bowl, ensuring the bowl is large enough for it to double in size. Pour over the boiling water and place a plate over the top, allowing the couscous to steam. Leave to cook for about 10 minutes or until it reaches the preferred level of softness.

While the couscous is cooking, fry the squeaky cheese. Pre heat the pan then fry the cheese till golden brown and crispy on each side.

Once the couscous is cooked, pour over the leftover oil and seasoning mixture and combine them. Add to a large salad bowl with the carrot, cucumber, spinach, onion and most of the Honest Bean Co Fava Beans. Drizzle over some more lemon oil and another teaspoon of seaweed seasoning over the top and mix up the salad.

Top the salad with the remaining beans, the chopped coriander and the fried squeaky cheese.
