100ml Mint Balsamic Dressing

250g Couscous

100g Pitted Kalamata Olives

½ Cucumber

1 Packet of Feta Cheese

1 Red Onion

Make your couscous following the manufacturer’s instructions and allow to cool.

Finely slice your red onion, and chop your cucumber into about 1cm cubes.

Once the couscous is cooled transfer into a large mixing bowl. Crumble in the feta cheese and mix in the cucumber, onion and olives.

Finally pour in the Mint Balsamic Dressing and mix thoroughly.

Serve as one large dish or in individual portions.
