French Bean and Rocket Salad

Serves 2-3 as a side dish

    Ingredients

  • 1 tbsp Yorkshire Rapeseed Oil
  • 1 tbsp Fennel Seed Dressing or Dressing of your Choice
  • 200g French Beans
  • 3 good handfuls Wild Rocket
  • 4 slices Parma Ham torn into strips
  • 6 Spring Onions chopped
  • Wensleydale Cheese - Optional

Method

For this recipe I like to use our Fennel Seed Dressing, however it is equally as delicious with our Honey and Mustard Dressing or Mint and Balsamic Dressing.

Heat a griddle pan on the hob with the Yorkshire Rapeseed Oil. When hot add the french bean and cook for about 3 mins, or until cooked. (make sure they still have a bit to them don't be tempted to over cook)
Remove from the pan and cool.
In a large bowl use your hands to mix together the rocket, spring onions, cheese if using and the now cooled french beans.
Add the dressing of your choice and toss through.
Turn out onto a serving dish and garnish with the parma ham.
Serve immediately.
