Yorkshire Bruschetta


A starter, or a light lunch, this is one of our favourite recipes. Our Yorkshire Rapeseed Oil with Basil has a lovely light flavour and gives this bruschetta recipe a lift! 


3 tbsp Yorkshire Rapeseed Oil with Basil

300g Tomatoes (about 4) finely chopped

1 small Onion (50g) finely chopped

1 clove of Garlic peeled and halved

2 cloves of Garlic, finely chopped

Salt and Pepper to taste

6 thick slices of Ciabatta Bread

6 fresh basil leaves



Place the tomatoes, onion, chopped garlic and 2tbsp of the basil oil into a bowl. Stir well and season. Place to one side until ready to serve.

Toast the ciabatta and use the remaining basil oil to brush onto both sides of the toast. Follow this by rubbing each side again with the halves of garlic.

Place each slice on an individual dish, and spoon on the tomato mixture, Garnish with a fresh basil leaf.
