Loaded Steak and Blue Cheese Sandwich

INGREDIENTS

To celebrate our rebrand we’ve worked with long time stockist of YRO, Fodder Harrogate, to bring you a truly decadent recipe. This is a proper sandwich with salad, perfectly seasoned steak and a delicious blue cheese sauce.

This recipe is packed full of local produce, which we picked up from Fodder.


Serves 2-3

INGREDIENTS

250g Steak - We used rump steak

Yorkshire Rapeseed Oil with Garlic

2 shallots

1 tsp sugar

3-4 small heritage tomatoes

170g Shepherds Purse Yorkshire Blue

100g YRO Garlic Mayonnaise

2 handfuls of watercress

Salt & pepper

A large ciabatta

METHOD

METHOD

Season the steak with a drizzle of garlic oil and a good pinch of salt and pepper.

Cut the shallots in half lengthways then thinly slice into semi circles.

Heat up a good drizzle of garlic oil in a pan and fry the steak, leaving it slightly pink in the middle. Set aside to rest on a board.

Fry the shallots in the steak pan, adding the sugar if required.

Slice the Ciabatta across the middle, cutting all the way through (this is a big sandwich!).

Bake for a further 10 mins, or slightly longer if required making sure everything is cooked through.

Roughly chop the blue cheese and add to a bowl with the mayonnaise. Mix together, mashing the cheese with a fork until smooth.

To assemble the sandwich, start by spreading half of the blue cheese sauce over the bottom half of the bread. Add a layer of sliced tomatoes, then a handful of watercress. Slice the steak into strips, then place across the top of the watercress. Top with the fried shallots and the rest of the blue cheese sauce, then place the top half of the bread back on.

This sandwich is definitely best enjoyed with a cold beer from Wold Top Brewery!
