Sweet Ginger Oatmeal Biscuits
They are a little bit moreish these Ginger Biscuits! The recipe is incredibly easy and you can rustle up a batch in minutes! That's the wonder of using cold pressed rapeseed oil in your bakes!
2 tbsp Yorkshire Rapeseed Oil with Ginger
200g Fine Oatmeal
½ tsp Baking Powder
25g Soft Dark Brown Sugar
50g chopped Crystallised Ginger
4 tbsp boiling Water
Heat the oven to 190C (375F – Gas Mark 5).
Mix all the dry ingredients together well. Add the Ginger Oil and boiling water. Combine thoroughly with a palette knife to make a soft dough.
Roll the dough out to approx 4-5cm thick on a surface dusted with fine oatmeal.
Cut into rounds with 2”/5cm pastry/biscuit cutter. Place on baking tray lined with baking paper.
Bake in preheated oven for approx 20 minutes until slightly golden in colour. Remove from the oven and cool on wire rack before dusting with caster sugar.
