Sweet Ginger Oatmeal Biscuits

Serves - Makes approx 20 biscuits


  • 2 tbsp Yorkshire Rapeseed Oil with Ginger
  • 8oz Fine Oatmeal
  • ½ tsp Baking Powder
  • 1 oz Soft Dark Brown Sugar
  • 2oz chopped Crystallised Ginger
  • 4 tbsp boiling Water


Heat the oven to 190 C (375 F – Gas Mark 5)
Mix all the dry ingredients together well.
Add the ginger oil and boiling water.
Combine thoroughly with a palette knife to make a soft dough.
Roll the dough out to approx 4-5cm thick on a surface dusted with fine oatmeal.
Cut into rounds with 2”/5cm pastry/biscuit cutter.
Place on baking tray lined with baking paper.
Bake in preheated oven for approx 20 minutes until slightly golden colour.
Remove from oven and cool on wire rack before dusting with castor sugar.
