French Bean and Rocket Salad

INGREDIENTS

A tasty salad dish that we have made on many occasion! Fresh flavours call for a drizzle of our Fennel Seed Dressing, or any of our salad dressings would work perfectly with this salad recipe.

1 tbsp Yorkshire Rapeseed Oil

1 tbsp Fennel Seed Dressing or Dressing of your Choice

200g French Beans

3 good handfuls of baby leaf salad

4 slices Prosciutto torn into strips

6 Spring Onions sliced into long strips

Wedge of cucumber (6cm ish!) cut into thin strips

METHOD

Heat a griddle pan on the hob with the Yorkshire Rapeseed Oil. When hot add the french beans and cook for about 3 mins, or until cooked (make sure they still have a bite to them don't be tempted to over cook). Remove from the pan and cool.

In a large bowl use your hands to mix together the rocket, spring onions, cheese if using and the now cooled french beans.

Add the dressing of your choice and toss through. Turn out onto a serving dish and garnish with the Parma ham. 

Serve immediately.
