Returning Home


Arriving home mid April after four months away I find spring in full bloom and the weather taking a turn for the better. Adam informs me we are moving forward with the new product range which is coming to the end of the testing cycle. This means we are now in full swing building the new bottling rooms for the forthcoming dressings and flavoured oils. Discussions inevitably come round to marketing of the new flavoured oils and their uses. So having recently watched the creations of Heston Blumenthal on the TV and more importantly, my good lady wife being away for a few days on a school residential, I decided to take to the kitchen! This however is where the resemblance to Mr Blumenthal and experimental cooking ends as I am generally a recipe book type of guy ….however. One of my favourite pasta dishes is Carbonara and the following is an easy quick recipe which uses one of our new range of oils, Garlic. The cooking was relatively simple although the timing of the different elements is not one of my strong points. The hard part was cleaning up afterwards as I had somehow used a large number of bowls, dishes and utensils!

Ingredients 3 egg yolks

8 tbsp of freshly grated parmesan

2 tbsp of Yorkshire Extra Virgin Rapeseed Garlic Oil

200 grms of English unsmoked streaky bacon slices cut into 0.5cm wide strips.

4 Tbsp of white wine

500 grms of dried pasta (Spaghetti)

15 grms butter salt black pepper

Additional freshly grated parmesan

Method Mix the parmesan and the egg yolks in a bowl until combined then place to one side. Heat the oil in a wok and add the bacon, stirring occasionally until crisp. Then add the wine and simmer until it has just evaporated, remove from the heat. Cook the pasta in a large saucepan of boiling salted water until firm to the bite. Drain the pasta but reserve a cup of the pasta water. Add pasta to the hot bacon and toss well to coat. Add the egg mixture and butter and toss again adding reserved water if necessary. Add salt and pepper to taste. Serve immediately with the additional parmesan. This recipe will serve four people. Should you wish to try this before the Garlic Oil is on sale then use 2 garlic cloves (peeled and halved) and cook until golden brown in the oil then remove prior to adding the bacon.
